Dario Princic Sivi Pinot Grigio 2020

A complex, terroir-driven, and downright kaleidoscopic interpretation of an oft mistreated grape (when in conventional hands), Dario's Pinot Grigio more than benefits from some serious skin maceration and his masterful touch. Pulled from 60-year-old vines on steeply terraced soils, fruit is Manually harvested,  fermented in open top chestnut barrels with indigenous yeast, macerated for 7 days on skins, and matured for 2 and half years in tonneaux. A dark pink-amber color, 'Sivi' is vibrant and ever-changing – with blood orange and plums, honey and caramel, balsamic and minerals, the flavor palate twists and turns in all the right ways. Apricot skin, mandarin, and ginger surge across the tongue, as spiced rhubarb and mascara cherries mingle with smoked tamarind and bergamot tea with red currants. Be ready for some volatile acidity and earthy tannins, and be rocked by the depth of flavor and rich texture of this wine. Not just a great Pinot Grigio, a wine that exudes and embraces individuality.
