The main rules at Azienda Agricola Francesco are no to chemistry and yes to biodiversity. Working exclusively with Trebbiano and Montepulciano, and in tiny amounts, Francesco's wines are natively fermented and see zero chemical or physical interventions. Rich yellow-gold in color, with strong notes of orchard fruit – golden pear, spiced apples – his Trebbiano is intense and persistent in the mouth with a strong streak of sea-air minerality (Digging through the rows of trees you can still find the remains of shells where once there was an ancient sea). Bold and vibrant, this is an excellent meditation wine; serve chilled but not cold and don't be afraid to let it come to room temp to bring out some of the fruit and complexity. As of tasting this again last week for the first time in a few months, it is absolutely singing right now, with an super seductive richness counteracted by blazing citrus and savory herbs.
