Scirto’s 'Don Pippinu' Bianco, so named after Giuseppe’s grandfather, comes from a collection of old vine plots averaging 60-80 years in age and growing at 600 to 1000 meters above sea level on deep volcanic soils. While Carricante is the dominant grape here, small percentages of Minnella Bianca, Catarratto and Grecanico are also harvested and included in the fermentation. Grapes are fermented by native yeasts, and see 5-7 days of maceration on the skins, followed by a stainless steel elevage of 10 to 12 months. No fining or filtration takes place for this wine, and no sulfur is added prior to bottling. Perfectly at home in the higher climes of Etna — and virtually nowhere else in Italy or the world – Carricante’s alluring and incisive aromas of orange peel and pink peppercorn balance its intense flinty stoniness, marked acidity and refreshing salinity.
